The recipe I’ve chosen to share is Tofu Shakshuka, a dish that holds so many memories for me. Back when I wasn’t vegan, I used to make it often for breakfast, enjoying the spicy, rich combination of eggs and tomatoes. Usually I’m not a fan of savoury meals for breakfast but I loved this one. When I transitioned to a plant-based lifestyle, I knew this was one of those meals I had to recreate.
Being able to recreate it with silken tofu reminds me I didn’t have to lose the dishes I loved. Instead, I got to reimagine them more compassionately, without compromising flavour.
Now, every time I make it, I’m reminded of how food can evolve with us, still offering that same comfort and joy. And sometimes I’ll even whip it up as a quick lunch or a simple dinner!
