Summer Poke Bowl

These Summer Poke Bowls come together in minutes and are perfect when it’s hot out! Watermelon adds the perfect crunch and sweetness to this super healthy bowl of yum!

Ingredients:

  • Brown rice
  • Cubed watermelon
  • Shelled edamame
  • Red cabbage
  • Sliced cucumber
  • Vegan Japanese seaweed salad (available at Asian grocers)
  • Baked tofu* (see notes)
  • Spring onion, for garnish

Quick Yuzu Dressing:

  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 tablespoon rice vinegar
  • 1/4 cup freshly squeezed orange juice

Method

To prepare dressing, combine everything in a small jar and shake till emulsified.

Start your Poke Bowl off with Brown Rice and add all other vegetables, followed by a generous amount of dressing to get all the flavours combined.

*You can purchase Baked or Teriyaki Tofu at supermarkets. For our version, we coated cubes of firm tofu with some Soy, Maple Syrup, Sesame Oil and a dash of Cornstarch and then baked at 180°C / 355°F till brown and crispy.
