Purple Cauliflower Taco ★★★★★1 review

Tacos are in many people’s top ten foods. Usually, they aren’t super healthy, but this recipe puts a healthy spin on some favourite flavours.

Ingredients

  • 1 large cauliflower
  • 1 cup of veggie broth
  • 2 Tbsp of liquid aminos (tamari/soy)
  • Juice of 1 lime
  • 1/2 white onion chopped
  • 1 Tbsp of hot sauce (or none of you dislike hot)
  • 1 Tbsp garlic puree
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp onion powder
  • Pink salt & pepper

Avocado crema:

  • 1-2 avocados
  • 2 Tbsp vegan mayo
  • Handful cilantro
  • Juice of 1 lime
  • 1 Tbsp garlic puree
  • 1 Tbsp apple cider vinegar
  • Pink salt & pepper to taste

Method

  1. Chop cauliflower and toss in saucepan with the veggie broth, lime juice & liquid aminos
  2. After 2 minutes of simmering, remove and drain
  3. Now add cauliflower to a bowl and add all spices & chopped onion
  4. Add to a baking pan with parchment paper and bake at 205°C/400°F for 20 minutes, flip and then cook another 20 minutes
  5. While you’re waiting for the cauliflower make the crema in a blender and add water till texture desired, then toss in fridge
  6. Once cauliflower is finished serve with sides of your choice, rice, beans, slaw, etc

    Hi, looks great but wondering how you got the cauliflower and tacos to turn Purple??? Unless they are brown from the sauce and they are wholemeal tacos and the picture makes them look purple. Ta
