Vegan Broccolini and Kale Tart

Super delicious and comforting tart, you can use any kind of veggie you want, i love broccolini and kale combination! This tart is really easy to make and really versatile.

Ingredients:

Crust:

  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1/2 cup vegan butter, cold
  • 4-6 tbsp cold water

Filling:

  • Small bunch of Kale
  • 2 stems of Broccolini
  • 1 tablespoon Olive oil
  • 1/2 tsp salt
  • 150g vegan cream cheese
  • 250g vegan cooking cream
  • 1 tbsp potato starch
  • 1/2 cup grated vegan cheese
  • 1 tsp salt

Method:

  1. In a bowl, combine four and salt.
  2. Add butter and incorporate it into the flour mixture with your hands. Add the water tablespoon by tablespoon, combine into a dough. Roll or press the dough into tart pan.
  3. Preheat oven to 200c (400f). Cook the crust in oven for 10 min.
  4. Cut off the hard ends of the broccoli, chop the kale and cook in oiled pan for couple minutes, season with salt and set aside.
  5. Mix together vegan cream cheese, soy cream, spices, potato starch, kale and cheese, taste and adjust the flavour, spread over the crust. Add broccolinis on top and cook in the oven for 30 min. Let it cool down and it will set completely.
  6. Serve with a side salad.
