Valentine’s Avocado Chocolate Mousse
Avocado is the secret ingredient in this deceptively indulgent Valentine's treat! Wow your loved one by whipping up this simple, healthy and delicious recipe.

INGREDIENTS
- 1 ripe avocado, peeled and diced
- 50g/1.8oz vegan dark chocolate, melted
- 2 Tbsp cocoa powder
- 3 Tbsp maple syrup
- 1 Tbsp almond milk
- 1/4 tsp instant coffee powder
- Pinch of sea salt
- 1/2 tsp vanilla extract
- Strawberries, diced
- Extra maple syrup
METHOD
- Prepare 2 dessert glasses by adding some chopped Strawberries and a drizzle of Maple Syrup to the bottom of the glass.
- Melt the dark chocolate using the double boiler method. Then, in a food processor, combine Avocado, Melted Chocolate, Cocoa, Maple Syrup, Instant Coffee Powder, Salt and Vanilla Extract. Blend till smooth and creamy.
- Spoon mousse over Strawberries and chill for 2 hours before serving.
