Valentine’s Avocado Chocolate Mousse

Avocado is the secret ingredient in this deceptively indulgent Valentine's treat! Wow your loved one by whipping up this simple, healthy and delicious recipe.

Serves 2 | Prep time: 10 mins + chilling time | Cooking time: 0 mins

INGREDIENTS

  • 1 ripe avocado, peeled and diced
  • 50g/1.8oz vegan dark chocolate, melted
  • 2 Tbsp cocoa powder
  • 3 Tbsp maple syrup
  • 1 Tbsp almond milk
  • 1/4 tsp instant coffee powder
  • Pinch of sea salt
  • 1/2 tsp vanilla extract
  • Strawberries, diced
  • Extra maple syrup

METHOD

  1. Prepare 2 dessert glasses by adding some chopped Strawberries and a drizzle of Maple Syrup to the bottom of the glass.
  2. Melt the dark chocolate using the double boiler method. Then, in a food processor, combine Avocado, Melted Chocolate, Cocoa, Maple Syrup, Instant Coffee Powder, Salt and Vanilla Extract. Blend till smooth and creamy.
  3. Spoon mousse over Strawberries and chill for 2 hours before serving.
