Tofu Feta with Tomato and Basil

This tofu feta is super quick to prepare and easy to make!


  • 200g/7oz firm tofu
  • 4 tbsp apple cider vinegar
  • 3 tbsp water
  • 1/4 cup olive oil
  • 1 tablespoon nutritional yeast
  • 1 1/2 tbsp miso paste
  • 1 tsp dried mixed herbs
  • 1/2 tsp garlic salt
  • 1 tbsp whole peppercorn
  • juice of 1/2 a lemon
  • mixed spices, to marinate (chilli, dill, oregano)
  • salt and pepper, to taste


  1. Press the firm tofu to remove excess water. Cut tofu into uniform cubes.
  2. Combine all ingredients and mix well • place marinade + tofu into an airtight container/jar.
  3. Refrigerate and allow to marinade overnight [or the longer, the better – I marinaded mine for 36 hours].
  4. Serve tofu feta as you would w regular feta, with sliced tomato, cucumber and basil.
