Sweet Potato Black Bean Chili

Dinner doesn't get much simpler than this one-pot Sweet Potato and Black Bean Chili. Made entirely from budget-friendly pantry staples, the classic pairing of earthy black beans and naturally sweet potatoes comes together beautifully in this comforting meal. Because it uses a jar of your favourite salsa for the base, you can easily control the spice level to fit your family's taste. Colourful and packed with nutrients, it's a satisfying bowl of goodness that the whole family will love.

Serves 4 | Prep time: 15 mins | Cooking time: 40 mins

INGREDIENTS

  • 4 cups of Sweet Potatoes (rinsed & chopped into bite-size pieces)
  • 1 can of Black Beans (leave undrained)
  • 1 medium yellow or white Onion, diced
  • 2 cloves of Garlic, minced
  • 1 jar of your favourite organic Salsa
  • 1 Tbsp Cumin
  • 1 Tbsp Chili powder
  • 3 cups of filtered Water
  • Dash of Salt and Pepper
  • Optional toppings: diced Avocado, chopped Cilantro/Coriander

METHOD

  1. Heat up a large pot on medium heat and throw in the garlic and onion. Add a little salt and pepper. Cook until the onions are translucent (keep adding a little water at a time so it doesn’t stick, or you can use olive oil or coconut oil if you prefer)
  2. Add the sweet potatoes, cumin and chili powder. Sauté for 5 minutes. Then add the salsa and water.
  3. Bring everything to a boil. Once boiling, lower to a simmer. Add black beans, cover, and cook for 30 min (stirring occasionally) until the sweet potatoes are tender.
  4. Top with cilantro, avocado, or any other toppings you want, then enjoy!
