Sweet Potato Black Bean Chili

This hearty Sweet Potato and Black Bean Chilli is the ideal dinner that will fill your tummy up and nourish you!

Ingredients:

  • 4 cups of Sweet Potatoes (rinsed and chopped into bite-size pieces)
  • 1 can of Black Beans (leave undrained)
  • 1 medium yellow or white Onion, diced
  • 2 cloves of Garlic, minced
  • 1 jar of your favorite organic Salsa
  • 1 tbsp Cumin
  • 1 tbsp Chili powder
  • 3 cups of filtered Water
  • Dash of Salt and Pepper

optional toppings: diced Avocado, chopped Cilantro/Coriander

Method:

1. Heat up a large pot on medium heat and throw in the garlic and onion. add a little salt and pepper. cook until the onions are translucent (keep adding a little water at a time so it doesn’t stick, or you can use olive oil or coconut oil if you want)
2. Add the sweet potatoes and cumin and chili powder. sauté for 5 minutes. then add the salsa and water.
3. Bring everything to a boil and then once boiling, lower to a simmer. add black beans, cover, and cook for 30 min (stirring occasionally) until the sweet potatoes are tender.
4. Top with cilantro, avocado, or any other toppings you want, then enjoy!
