Sunflower Fruit Salad

For an even more colourful start to your day try drizzling a few tablespoons of passionfruit over your fruit salad.

Serves 1 | Prep time: 5 mins | Cooking time: 2 mins

INGREDIENTS

  • 2 cups mixed fresh fruit (e.g. pawpaw, banana, kiwifruit and berries)
  • 2 tsp sunflower seeds
  • 1 cup soy yoghurt
  • 2 tsp chia seeds
  • 1 piece wholemeal toast
  • 2 tsp peanut butter

METHOD

  1. Chop fresh fruit and mix together in a bowl with sunflower seeds.
  2. Cover fruit with soy yoghurt and chia seeds.
  3. Toast bread and spread with peanut butter.

    I dont like soy. Is there any other kind of yoghurt and milk?

      Hi Diane, you could try a coconut yoghurt instead :) This recipe has no milk but in general there are heaps of non soy plant based milks, commonly available ones include almond, hemp, coconut, hazelnut and rice milks.
