Sticky Orange & Sesame Tofu

INGREDIENTS
- 1 cup rice
- 220g/7.8oz tofu
- 1 orange
- 4 stalks spring onion
- 120g/4.2oz green beans
- 1 Tbsp sesame seeds
- 2 cloves garlic
- 2 Tbsp corn flour
- 2 Tbsp soy sauce (or tamari for GF)
- 2 tsp sugar
- 1 tsp hot sauce (Sriracha)
- 3 Tbsp oil
METHOD
- Cook – Place rice in a saucepan and add 1¾ cups of water per cup of rice. Cover, bring to the boil, reduce to low and simmer for 15 minutes. Remove from heat and let rest for 5 minutes with lid on. Fluff with a fork.
- Prep & Mix – Slice tofu into 1cm cubes. Finely mince garlic. Remove tops and tails from green beans. Slice spring onion into 3cm pieces. Halve orange(s) juice 1/2 and set the other half aside. Place in bowl: garlic, orange juice, soy sauce, sugar and hot sauce. Mix well.
- Boil & Mix – Place a saucepan with water on the stove and bring to the boil. Cook green beans in the boiling water until tender (3-4 minutes). Drain green beans. Place corn flour in a bowl, add a generous pinch of salt and pepper. Mix this with the tofu.
- Fry – Place fry pan on high heat with 3 Tbsp of oil. When it’s really hot, add tofu to the pan. Cook and toss around for 5-6 minutes. Add sesame seeds, beans and spring onion and cook for 2 more minutes. Add sauce to the pan and remove from heat. Toss everything around.
- Finish & Serve – Slice remaining orange into wedges. Place rice in a bowl. Top with green bean and tofu mix and drizzle the sauce over the top. Garnish with orange wedges.
