Sausage Rolls
Momma's homemade sausage rolls with nanna's homemade tomato sauce!
Serves 32 mini-rolls | Prep time: 10 mins | Cooking time: 25 mins
INGREDIENTS
- 2 vegan puff pastry sheets
- 1 large onion- finely chopped
- 2 garlic cloves
- 1 sweet potato, grated
- 1 large potato, grated
- 1 large carrot, grated
- 1 large zucchini, grated
- 1 can cannellini beans, drained & rinsed
- 1 Tbsp soy sauce
- 1 Tbsp vegan ‘beef’ style stock powder
- 2 tsp dried mixed herbs
- 1 Tbsp tomato paste
METHOD
- Preheat oven to 180C / 355F.
- Heat 1-2 Tbsp olive oil in a large frying pan.
- Fry onion and garlic for a minute or two until soft.
- Add the other vegetables to the pan and cook for about 5 minutes on a medium heat until soft and starting to brown.
- Add beans to the pan and mash with a fork.
- Stir in soy sauce, stock powder, herbs and tomato paste.
- Cut pastry sheets in half.
- Place filling lengthways and roll, then cut into bite size pieces.
- Bake for 15-20 mins

I’ve made these about 10 times. They are amazing. It takes a more like 15 min to cook all the veggies though. You can also use a spiraliser for the veggies.
