Red Velvet Cookies ★★★★★1 review

Vibrant yet delicious red velvet chocolate chip cookies for all your vegan treat cravings! These yummy cookies are super easy to make and take only 12 minutes to bake!

Makes 16-20 cookies

INGREDIENTS

  • 230g All Purpose Flour⁣⁣⁣
  • 20g cocoa powder⁣⁣⁣
  • 140g caster sugar⁣⁣⁣
  • 100g light brown sugar⁣⁣⁣
  • 150g unsalted vegan butter (at least 70% fat- I use Naturli)⁣⁣⁣
  • 60ml non-dairy milk⁣⁣⁣
  • 1 tsp Vanilla Extract⁣⁣⁣
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 200g dark chocolate chips
  • 2 drops vegan red food gel colouring

METHOD

  1. Pre-heat oven to 180 C⁣
  2. Cook 100g of butter in a saucepan over low-medium heat for 5 minutes or until the butter foams then browns. Leave to cool for 3 mins.⁣⁣⁣
  3. Cut up remaining butter and add to the cooled melted butter.⁣⁣⁣
  4. Cream together butter, both sugars, vanilla and plant milk for 5 minutes. ⁣⁣⁣
  5. Add the 2 drops red food colouring.⁣⁣
  6. Sift together flour, cocoa powder, baking soda and salt.⁣⁣⁣
  7. Add the dry ingredients to the wet ingredients (don’t overmix!)⁣⁣⁣
  8. Fold in 90% of the chocolate chips.⁣⁣
  9. Scoop balls of dough onto a baking tray with parchment (40-50g for each ball). Add the remaining 10% spare chocolate chips to the top of the cookies.⁣⁣
  10. Place in the freezer for 15 minutes.⁣ ⁣⁣
  11. Bake at 180C for 12 minutes.⁣⁣
  12. Serve with flaky sea salt!

    these look great! In Australia, the ‘Queen’ brand has a vegan red gel food colouring. Available online or at supermarkets. Can’t wait to try these!
