Pink Sushi

Colouring your sushi makes it a little more fun and also nutritious. Maddie's food journal:


  • rice
  • beet juice
  • tofu
  • carrot
  • cucumber
  • avocado
  • capsicum
  • nori sheets

Alternative serving suggestions

Instead of using beet juice, you can add turmeric to make the rice yellow, or add parsley juice to make the rice green.


1. This pink sushi is made by adding beet juice to the rice.

2. Fill them up with your favourite fillings like tofu, carrot, cucumber, avocado or capsicum.

3. And now you’ve got a fun meal the kids will love whilst sneaking in some extra veg.
