Oat Pancakes
Blended in minutes with rolled oats, ripe banana, and warm cinnamon, these easy, flourless pancakes cook up delicious for a wholesome morning stack. From David's food journal.
Serves 2 | Prep time: 5 mins | Cooking time: 15 mins
INGREDIENTS
- 2 cups of rolled oats
- 1 1/2 cups of plant based milk
- 1/3 cup coconut sugar
- 1 ripe banana
- 1 tsp of cinnamon
- 1 tsp of baking powder
- fresh berries (optional)
METHOD
- Place all ingredients in a processor and blend until smooth.
- Once smooth pour into a mixing bowl. (The batter has a tendency to thicken if it sits for too long. Mix through a little plant milk/water if this happens).
- Cook it like a pancake!
- It will just take a bit longer on a slightly higher temperature than ‘normal’ pancakes. Enjoy with fresh berries on top!
