Loaded Sweet Potato Fries with Garlic Cashew Cream

Is there anything better than Loaded Fries? This version uses Sweet Potato and it topped with an array of delicious add-ons.

Ingredients:

  • 3 medium Sweet Potatoes, cut into fry shape
  • 2 tablespoons Olive Oil
  • 1 tbsp Paprika
  • Salt and Pepper, to taste

Garlic Cashew Cream:

  • 1/2 cup raw Cashews, soaked overnight
  • 3 heads of Garlic
  • 1/4 cup Oat Milk
  • 1 tbsp Tahini
  • 2 tbsp Nutritional Yeast
  • Juice of 1/2 a Lemon
  • Salt and Pepper, to taste

Method:

  1. Preheat oven to 200C/400F. Line a baking sheet with baking paper. Coat Sweet Potato in Oil, Paprika, Salt and Pepper.
  2. Transfer to baking sheet and bake for 20-25 minutes or until cooked and tender.
  3. Top with Garlic Cashew Cream, Dukkah, Paprika and Herbs of your choice. Enjoy!

Garlic Cashew Cream:

  1. To make Garlic Cashew Cream, first completely wrap up your heads of Garlic in foil. Place into an oven and roast at 200C/400F for 45 minutes. Once cooked, you’ll be able to spoon out the creamy roasted garlic.
  2. Transfer roasted Garlic into a blender with Cashews and the remainder of your ingredients and blend till smooth. Serve on fries.
