Hearty Pea Soup with Veggies

Ingredients:

(In a blender)

  • 4 garlic cloves
  • 1 tsp lemon juice
  • 2 cups of peas
  • 1 avocado
  • 1 tbsp miso paste, or 2 cube of veggie bullion
  • 2 tsp sea salt
  • 1/2 cup of water
  • 1/2 cup of coconut cream or any type of creamer with a neutral taste like soy cream cheese.
  • 1 tbs of nutritional yeast (totally optional but I add for the extra B-vitamins and cheesy flavor but if you can find vegan cheese in your country that’s awesome too. I would use Tofutti cream cheese or Daiya mozzarella cheese)

Method:

(In a large pan)
Boil 2 cut carrots, 2 cups of cauliflower, 2 cups of broccoli, one small onion and 5 cut potatoes. Pour pea soup in a bowl and add veggies with some legumes and pepper.
