Easy Vegan Chocolate Chip Muffins

These Chocolate Chip Muffins are not just healthy but also moist, delicious and to die for!

Ingredients: 

  • 1 1/2 cups Oats
  • 1/2 cup Cashews
  • 5 Medjool Dates, pitted
  • Pinch of Salt
  • 1 teaspoon Baking Powder
  • 1 cup Chocolate Chips (Vegan)
  • 1 1/2 cups Almond Milk

Method:

Preheat oven to 175C and grease muffin cups.

Add all ingredients except the Chocolate Chips to a blender and blend until smooth.

Pour batter into muffin tray and fill till 3/4 full. Sprinkle liberally with Vegan Chocolate Chips.

Bake for 25-35 minutes or until golden and a skewer inserted into the middle of each muffin comes out dry.

Leave to cool for 15 minutes before taking out of the tin and enjoying with a cup of coffee or tea.
