Cinnamon-Oat Waffles

Ingredients

  • 1/2 cup of oats
  • 2/3 cup of plain flour
  • 1 teaspoon baking powder
  • 1 tablespoon coconut sugar
  • Pinch of salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 tablespoons rice bran oil
  • 2/3 to 1 cup of rice, soy or almond milk

Toppings

  • Fresh raspberries
  • Maple syrup

Method

Combine all the ingredients, apart from the milk and oil, and mix together. Add the oil and slowly add the non dairy milk until it is a silky looking batter, they resemble pancake consistency.

If you don’t have a waffle maker, I would recommend you get one as they are the most important item to have in any kitchen. If you don’t have one yet or are waiting on one to arrive in the mail you can finish these off in a fry pan as a pancake!
Pouring out some mixture and smoothing into a disk shape and over a medium heat with a little oil cook each side until golden brown.

If you do have a waffle maker turn that bad-boy on and spoon the mixture in until it covers the bottom rack and then close.
Cook until golden brown and crispy!

Serve with raspberries and maple syrup while still hot.
