Chocolate Chia Pudding

A healthy, chocolatey pudding made with omega-3 rich chia seeds.

Serves 2 | Prep time: 15 mins + chilling time | Cooking time: 0 mins

For bottom layer

  • 1/2 cup of chia seeds
  • 1/2 cup of coconut cream
  • 1 1/2 cup of filtered water
  • 3 Tbsp of maple syrup
  • 1/2 tsp of almond extract
  • 1/4 tsp of cinnamon powder

For middle layer

  • Chocolate chips

For top layer

  • 3 bananas
  • 3 Tbsp of raw cacao powder

  1. Add all ingredients for bottom layer to a medium sized bowl, stir well, and place in fridge for at least 4 hours, or alternatively, make it the night before to leave overnight in the fridge.
  2. Once the chia pudding is done, pour into serving containers. Melt some chocolate chips and add them to the top of the chia pudding to form the middle layer.
  3. Blend ingredients for the top layer in a high-speed blender and pour into containers. Garnish with more chocolate chips, because who doesn’t love chocolate, and enjoy.
