Chocolate Chia Pudding
A healthy, chocolatey pudding made with omega-3 rich chia seeds.
Serves 2 | Prep time: 15 mins + chilling time | Cooking time: 0 mins
INGREDIENTS
For bottom layer
- 1/2 cup of chia seeds
- 1/2 cup of coconut cream
- 1 1/2 cup of filtered water
- 3 Tbsp of maple syrup
- 1/2 tsp of almond extract
- 1/4 tsp of cinnamon powder
For middle layer
For top layer
- 3 bananas
- 3 Tbsp of raw cacao powder
METHOD
- Add all ingredients for bottom layer to a medium sized bowl, stir well, and place in fridge for at least 4 hours, or alternatively, make it the night before to leave overnight in the fridge.
- Once the chia pudding is done, pour into serving containers. Melt some chocolate chips and add them to the top of the chia pudding to form the middle layer.
- Blend ingredients for the top layer in a high-speed blender and pour into containers. Garnish with more chocolate chips, because who doesn’t love chocolate, and enjoy.
