Butterbean Curried “Egg” Salad ★★★★★1 review

Back with another healthy vegan sandwich idea for you guys! This time it's a play on a curried egg mayo sandwich, but using canned butter beans instead.

Serves 2 | Prep time: 10 mins | Cooking time: 0 mins

INGREDIENTS

  • 1 tin butter beans, drained & rinsed
  • 4 Tbsp vegan mayonnaise
  • 2 tsp curry powder
  • 1 tsp garlic powder
  • 1 tsp maple syrup
  • 1/4 tsp Kala Namak (black salt)
  • Wholemeal bread, lettuce, tomato, cucumber (for GF use gluten-free bread)

METHOD

1. Add all the ingredients into a bowl and mash it together.

2. Spread in on a slice of bread. Add some salad on top and slap on another piece of bread. Enjoy!
