Butterbean Curried "Egg" Salad

Back with another healthy vegan sandwich idea for you guys! This time it's a play on a curried egg mayo sandwich, but using canned butter beans instead.

Ingredients:

  • 1 tin butter beans, drained
  • 4 tablespoons vegan mayonnaise
  • 2 teaspoons curry powder
  • 1 teaspoon garlic powder
  • 1 teaspoon maple syrup
  • 1/4 tsp Kala Namak (black salt)
  • Bread, lettuce, tomato, cucumber

Method:

1. Add all the ingredients into a bowl and mash it together.

2. Spread in on a slice of bread. Add some salad on top and slap on another price of bread. Enjoy!
