Bamia
Bamia is a typical Iraqi stew that's traditionally made with okra and meat. I veganized this traditional recipe which I grew up eating and added a few other ingredients. Emira's food journal: http://on.fb.me/1t8eT2E
Ingredients:
- 1 eggplant
- 1 red pepper
- 1 onion
- 1 can of tomato sauce
- 4 garlic cloves
- 1 tsp pomegranate molasses (agave syrup works too)
Method:
- Cut and saute eggplant with the red pepper and onion until brown and soggy, pour into blender and add can of tomato sauce, salt, molasses, pepper and garlic.
- When the sauce is smooth pour back into the same pan and add any topping of your liking. Soy chicken, soy beef, potato, okra etc.
Added: Sauteed okra and peas and served with Basmati rice(Shredded soy/seitan meat goes really well with this recipe)
