Bamia

Bamia is a typical Iraqi stew that's traditionally made with okra and meat. I veganized this traditional recipe which I grew up eating and added a few other ingredients. Emira's food journal: http://on.fb.me/1t8eT2E

Ingredients:

  • 1 eggplant
  • 1 red pepper
  • 1 onion
  • 1 can of tomato sauce
  • 4 garlic cloves
  • 1 tsp pomegranate molasses (agave syrup works too)

Method:

  1. Cut and saute eggplant with the red pepper and onion until brown and soggy, pour into blender and add can of tomato sauce, salt, molasses, pepper and garlic.
  2. When the sauce is smooth pour back into the same pan and add any topping of your liking. Soy chicken, soy beef, potato, okra etc.

Added: Sauteed okra and peas and served with Basmati rice(Shredded soy/seitan meat goes really well with this recipe)
