Warming Winter Stew

Beat the winter chill with the ultimate plant-based comfort food. This thick and hearty Warming Winter Stew is packed with fibre-rich legumes, wholesome barley, tender potatoes, and macaroni pasta. It's a complete, budget-friendly one-pot meal that's easy to customise, simple to cook, and guaranteed to keep you full and nourished all evening long

Serves 4 | Prep time: 15 mins | Cooking time: 45 mins

INGREDIENTS

  • 2L vegetable stock
  • 2 garlic cloves
  • 1 Tbsp oil
  • 2 cups macaroni
  • 1 cup soup mix (various legumes & barley)
  • white part of a leek, chopped
  • 1 brown onion
  • 1 carrot
  • 1/2 head broccoli
  • 2 désirée potatoes
  • Salt & pepper to taste

METHOD

  1. In a stock pot add vegetable stock, leek, garlic, oil, onion and soup mix.
  2. Cook on medium heat for 35 minutes until legumes and barley are tender.
  3. Chop carrot, potatoes and broccoli into bite sized pieces.
  4. Add vegetables and macaroni to stock pot, cook for a further 8-10 minutes. More water may be needed to keep the pasta cooking thoroughly.
  5. Salt and pepper to taste. Serve with crusty bread (Use GF bread for gluten-free option).
