Warming Winter Stew

It's a complete, budget-friendly one-pot meal that's easy to customise, simple to cook, and guaranteed to keep you full and nourished all evening long
Serves 4 | Prep time: 15 mins | Cooking time: 45 mins
INGREDIENTS
- 2L vegetable stock
- 2 garlic cloves
- 1 Tbsp oil
- 2 cups macaroni
- 1 cup soup mix (various legumes & barley)
- white part of a leek, chopped
- 1 brown onion
- 1 carrot
- 1/2 head broccoli
- 2 désirée potatoes
- Salt & pepper to taste
METHOD
- In a stock pot add vegetable stock, leek, garlic, oil, onion and soup mix.
- Cook on medium heat for 35 minutes until legumes and barley are tender.
- Chop carrot, potatoes and broccoli into bite sized pieces.
- Add vegetables and macaroni to stock pot, cook for a further 8-10 minutes. More water may be needed to keep the pasta cooking thoroughly.
- Salt and pepper to taste. Serve with crusty bread (Use GF bread for gluten-free option).
