Vegan Fried Rice ★★★★★2 reviews

So many beautiful colours and flavours in this recipe. Plus, a perfect quick and easy meal. Great for kids and all the family!

Serves 4-6 | Prep time: 15 mins | Cooking time: 10 mins

INGREDIENTS

  • 1 tsp sesame oil
  • 1/2 cup carrots, chopped
  • 4 scallions, sliced
  • 2 cloves garlic, minced
  • 1/2 tsp fresh ginger, chopped
  • 1/2 block of firm tofu, crumbled
  • 1/4 tsp turmeric
  • 1/2 cup edamame
  • 4 cups cold cooked brown rice
  • 1-2 Tbsp coconut aminos, liquid aminos, tamari sauce, or other alternative
  • Splash of rice vinegar
  • Fresh cilantro to garnish

METHOD

  1. Heat oil in a large skillet.
  2. Add carrots and scallions, sauté for about 5 minutes.
  3. Add garlic and ginger then sauté a minute more.
  4. Toss crumbled tofu with turmeric and add to skillet.
  5. Add edamame, rice, liquid aminos or alternative, and rice vinegar. Toss to combine, heat through, allow to start browning.
  6. Garnish with cilantro and enjoy!

    Very easy and quick to make…i didnt use tofu, but it was still amazing
