Vegan Chocolate and Vanilla Swirl Ice Cream

I never thought I could make a such delicious vegan ice cream. I usually just make my ice cream with banana but with cashews is even more creamy, I love the fact that I am having a really nourishing ice cream made with delicious and healthy ingredients.

Ingredients:

  • 2 cups of soaked cashews (to soak the cashews, just leave them in warm water for 30 minutes or so)
  • 1/3 cup agave syrup
  • 1 cup almond milk
  • 3 medjool dates
  • 1/2 vanilla bean
  • 1/2 tsp Himalayan salt
  • 1/2 cup cacao powder

8 ice cream cones

toppings:

  • 1/3 cup crushed pistachio
  • 3 tbsp date syrup

Method:

  1. We are going to start creating the base of this vegan chocolate vanilla ice cream, in a blender, add the soaked cashews (drain them previously), agave syrup, almond milk, pitted dates, vanilla and salt. Blend until you get a smooth even texture.
  2. Take 1/2 of this mixture and reserve in a bowl, leave the other half of the mixture in the blender and add the cacao powder. Blend until the cacao is well mixed.
  3. I used a rectangular mold, pour the two bases of the ice cream in opposite sides and then I blend a bit in the middle. You can customize and mix more if you like!
  4. Cool it in the freezer overnight. Take it out of the freezer 30 minutes before serving.
  5. To make these delicious colorful cones, dip the edge of the cones in date syrup, you could use agave syrup as well or any syrup that you like really. Then dip in the crushed pistachios.
  6. Then just add scoops of this delicious vegan chocolate vanilla ice cream and enjoy!
