Toasted Pepita Salad

A fresh green salad, tossed with avo, cherry tomatoes, and topped with toasted pepitas to finish

Ingredients

Serves 1

  • 100g / 3.5oz Baby spinach leaves
  • 6 Cherry tomatoes halved
  • 1/2 Avocado
  • Sesame seeds
  • Pepita seeds
  • Spray coconut oil
  • 2 Tbsp Smoked paprika
  • 50g / 1.7oz tamari sauce

Method

  1. Coat pepita seeds in a light spray of oil, tamari sauce and paprika. Spread on a baking tray.
  2. Under low heat grill pepita seeds, keep a close eye as they can burn easily. Remove once toasted lightly and set aside to cool.
  3. In a bowl mix baby spinach leaves, tomatoes and sesame seeds. Add cooled pepita seeds.
  4. Top with avocado and serve!
