Soy Protein Crisps & Peanut Butter Chocolate Bars
If you're looking for a healthy treat that's rich in plant-based protein and totally satisfying, these Soy Proteins Crisps Chocolate Bars are the perfect no-bake snack. Packed with soy protein crisps, creamy peanut butter, naturally sweetened with dates and maple syrup, and coated with vegan chocolate, they deliver a delicious blend of texture and flavour in every bite. They're ideal for a post-workout boost or a feel-good afternoon pick-me-up.

INGREDIENTS
- 150g soy protein crisps
- 25g hemp protein powder (can use plant protein powder of choice)
- 125g peanut butter
- 6 medjool dates + 1/2 cup hot water
- 40g pure maple syrup
- 300g vegan chocolate bars
METHOD
- Prepare a 23cm x 23cm baking sheet or tray with baking paper, covering the sides too.
- In a bowl, combine the dry ingredients (soy crisps and hemp protein powder).
- Blend pitted medjool dates with half a cup of hot water until a paste forms. It’s okay if the dates aren’t fully blended.
- In another bowl, mix the date paste, peanut butter and maple syrup together. Then add to the dry ingredients bowl and combine well.
- Scoop the mixture into the tray and press down flat. Place in the freezer for 30 minutes, until firm. Then cut into 28 bars.
- Melt the chocolate in a bain marie, then using a couple of forks, dip each bar in the chocolate, coating all sides. Refrigerate until firm and enjoy.
Note: Store the soy crisp chocolate bars in an airtight container in the fridge for about a week.
