Serves 28 bars | Prep time: 20 mins + chilling time | Cooking time: 0 mins

INGREDIENTS

  • 150g soy protein crisps
  • 25g hemp protein powder (can use plant protein powder of choice)
  • 125g peanut butter
  • 6 medjool dates + 1/2 cup hot water
  • 40g pure maple syrup
  • 300g vegan chocolate bars

METHOD

  1. Prepare a 23cm x 23cm baking sheet or tray with baking paper, covering the sides too.
  2. In a bowl, combine the dry ingredients (soy crisps and hemp protein powder).
  3. Blend pitted medjool dates with half a cup of hot water until a paste forms. It’s okay if the dates aren’t fully blended.
  4. In another bowl, mix the date paste, peanut butter and maple syrup together. Then add to the dry ingredients bowl and combine well.
  5. Scoop the mixture into the tray and press down flat. Place in the freezer for 30 minutes, until firm. Then cut into 28 bars.
  6. Melt the chocolate in a bain marie, then using a couple of forks, dip each bar in the chocolate, coating all sides. Refrigerate until firm and enjoy.

Note: Store the soy crisp chocolate bars in an airtight container in the fridge for about a week.
