SOS Free Mediterranean Potato Salad

Perfectly tender potatoes are paired with Mediterranean-inspired herbs and zesty lemon to create a refreshing and satisfying salad that's as healthy as it is delicious. INGREDIENTS
- 1.5 kg/3.3 lb white potatoes, cubed
- 2 spring onions, chopped
- 2 handfuls fresh parsley and dill, finely chopped
- 1/2 red onion, finely diced
S.O.S. Free Sauce
- 15g/0.5oz fresh celery stalk, chopped
- 3 garlic cloves, sliced
- 1/3 cup pepitas
- 1 cup raw cashews
- 3/4 cup water
- 1 tsp cumin
- 1/2 tsp cayenne pepper
- 3 1/2 Tbsp fresh lemon juice
- 1 Tbsp apple cider vinegar
METHOD
- Boil the potatoes: Bring a large pot of water to a boil. Add the cubed potatoes and simmer for about 20-25 minutes.
- Prep other ingredients: While the potatoes are boiling, chop the spring onions, herbs, red onion and celery, slice the garlic, and measure the remaining ingredients so they’re ready to use. Place the cashews in a bowl and pour the water over them.
- Make the S.O.S. Free sauce: Dry fry the pepitas and sliced garlic in a non-stick pan on medium heat for about 5 to 7 minutes. Once done, in a high-speed blender add all the sauce ingredients and blend until smooth and creamy.
- Assemble: When the potatoes are ready, remove from heat, drain, and add cold water to cool them a little then drain again. Add the potatoes, spring onion, herbs, red onion and sauce to a large bowl. Combine gently ensuring all potato cubes are covered in the sauce. Enjoy!
