Simple Apple Pie Recipe
This simple vegan apple pie is the perfect comforting dessert, filling the kitchen with the aroma of warm apples and cinnamon. Made with everyday ingredients and easy-to-follow steps, it's a great recipe for new bakers. Perfect for sharing with family and friends, it's a cosy treat that works just as well for special occasions as it does for a relaxed weekend bake.

INGREDIENTS
- 8 to 9 green apples
- 1/2 cup raw sugar + extra for dusting
- 1 1/2 tsp cinnamon
- 1/4 tsp clove powder
- pinch of nutmeg
- 1 1/2 Tbsp lemon juice
- 2 sheets of vegan puff pastry
- some plant milk for glaze
METHOD
- Peel and cube all the apples. Add them to a saucepan along with the sugar, cinnamon, clove, nutmeg and lemon juice. Mix well.
- If the pastry sheets you’re using are frozen, take out the two sheets from the freezer before cooking the apples, to thaw them.
- On low to medium heat, cook the apples for about 15 minutes, stirring occasionally until all the liquid has been absorbed.
- Preheat oven to 180°C/356°F.
- Line a pie dish or pan with baking paper. If using a square pan, for the first pastry sheet, cut diagonal slits (3 cm long) at each corner to ensure that it fits in and the corners can be overlapped and pressed to shape.
- Spoon the apple mix into the pan, then cut the second pastry sheet into even strips and place them on top in a lattice pattern.
- Brush the lattice with plant milk and sprinkle with sugar.
- Bake for 35 to 40 minutes or until golden brown.
