Post work out Asian bowl!

Ingredients:
Soak kelp noodles for about 30-60 minutes in water.
FOR SWEET MUSTARD DRESSING:
- 1 1/2 cups of chickpeas
- The meat from a young thai coconut + 1/2 cup of it’s liquid
- 2 tbsp of stone ground mustard
- 1 tsp pickled or fresh ginger (powder is fine too)
- 1 tbsp sesame seeds
- 2 tsp curry powder
- The juice from half a lemon
- 1 tbsp of tamari sauce
When consistency is smooth, pour over noodles and massage for a few seconds.
Add tempeh, chickpeas, sautéed spinach, sun-dried tomatoes, bean sprouts, almonds, seaweed. Whatever floats your boat.
