Pecan and Almond Salted Caramel Slice

Ingredients:
Base Layer:
- 1 cup pecans
- 1/2 cup natural almonds
- 12 dates
Caramel:
- 1 cup raw cashews
- 1/3 cup melted coconut oil
- 1/4 cup water
- 1/4 cup maple syrup
- 1/4 cup water
- pinch of sea salt
- 1 tsp vanila extract
Peanut Butter Layer:
- 1 cup natural peanut butter
Chocolate Layer:
- 1/2 cup melted coconut oil
- 1/4 cup maple syrup
- 1/4 cup raw cacao
- 3 tbsp crushed unsalted peanuts
Method:
- Pulse ingredients for base in food processor until crumbly and sticks together.
- Press into a lined 20×20 slice tin and put in freezer while you make caramel.
- Blend ingredients for caramel on high speed until smooth. Poor over base and pop back in freezer for at least 20 mins,
- Spread peanut butter over caramel layer and put back in freezer while you make choc layer.
- Melt ingredients for chocolate layer in saucepan on low heat. Poor it over the peanut butter layer and sprinkle with crushed peanuts. Put back in freezer until set, atl east 3-4 hours, or best overnight.
- To serve remove from freezer and cut into slices whilst still firm.
- Let defrost for 10 minutes so that the caramel layer softens a little! Enjoy!
