Pecan and Almond Salted Caramel Slice

Ingredients:

⁣Base Layer⁣:

  • 1 cup pecans⁣
  • 1/2 cup natural almonds⁣
  • 12 dates⁣

Caramel:

  • 1 cup raw cashews
  • 1/3 cup melted coconut oil
  • 1/4 cup water
  • 1/4 cup maple syrup
  • 1/4 cup water
  • pinch of sea salt
  • 1 tsp vanila extract

⁣Peanut Butter Layer:

  • 1 cup natural peanut butter

Chocolate Layer:

  • 1/2 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup raw cacao
  • 3 tbsp crushed unsalted peanuts

Method:

  1. Pulse ingredients for base in food processor until crumbly and sticks together⁣.
  2. Press into a lined 20×20 slice tin and put in freezer while you make caramel⁣.
  3. Blend ingredients for caramel on high speed until smooth. Poor over base and pop back in freezer for at least 20 mins⁣,
  4. Spread peanut butter over caramel layer and put back in freezer while you make choc layer.
  5. Melt ingredients for chocolate layer in saucepan on low heat. Poor it over the peanut butter layer and sprinkle with crushed peanuts. Put back in freezer until set, atl east 3-4 hours, or best overnight. ⁣
  6. To serve remove from freezer and cut into slices whilst still firm⁣.
  7. Let defrost for 10 minutes so that the caramel layer softens a little! Enjoy!⁣
