Peanut Butter Salad Sandwich ★★★★★3 reviews

Peanut butter is as simple as it gets and is a great source of protein. This veggied up PB sandwich is great for kids and adults alike!

Serves 1 | Prep time: 5 mins | Cooking time: 0 mins


  • 2 slices wholemeal bread
  • 2 Tbsp peanut butter
  • 1/4 cup grated carrot
  • 1/4 cup cucumber, sliced
  • 1/2 tomato, sliced
  • 1/2 cup lettuce, cut thinly


  1. Spread peanut butter onto the bread.
  2. Add to your sandwich the grated carrot, cucumber, lettuce, tomato, your favourite seasonings if desired and enjoy!

    I would not have thought of putting peanut butter in a salad sandwich but it tastes so good! I used a crunchy peanut butter for extra texture :)

    Again another day full of carbs , rice in the morning, bread roll for lunch, and pasta for dinner? I Am sorry but I think this menu is not very well put together!

You can choose to follow it exactly or use it as inspiration to plan your own meals.
      It’s designed with newcomers to vegan eating in mind and we’ve kept the recipes simple, with ingredients that are generally ones most people will be familiar with and easy to find in local supermarkets, specialty stores or online. Hence, feel free to change it up to your liking.
