Peanut Butter Salad Sandwich
Peanut butter is as simple as it gets and is a great source of protein. This veggied up PB sandwich is great for kids and adults alike!
Serves 1 | Prep time: 5 mins | Cooking time: 0 mins
INGREDIENTS
- 2 slices wholemeal bread
- 2 Tbsp peanut butter
- 1/4 cup grated carrot
- 1/4 cup cucumber, sliced
- 1/2 tomato, sliced
- 1/2 cup lettuce, cut thinly
METHOD
- Spread peanut butter onto the bread.
- Add to your sandwich the grated carrot, cucumber, lettuce, tomato, your favourite seasonings if desired and enjoy!

I would not have thought of putting peanut butter in a salad sandwich but it tastes so good! I used a crunchy peanut butter for extra texture :)

Again another day full of carbs , rice in the morning, bread roll for lunch, and pasta for dinner? I Am sorry but I think this menu is not very well put together!
