Peanut Butter and Banana Magnums

These PB & Banana Magnums by the talented Marina Wright are an absolute showstopper.



  • 1/2 cup Cashews, soaked for 4 hours
  • 1/4 cup Coconut Milk
  • 5 Medjool Dates, pitted
  • 2 tbsp Peanut Butter
  • 2 tbsp Coconut Oil
  • 1 ripe Banana

Chocolate Coating:

  • 150g Vegan Dark Chocolate
  • 1 tbsp melted Coconut Oil
  • 50g Loving Earth Caramel Chocolate
  • Crushed Macadamias


Combine all filling ingredients in a high speed blender and blend till smooth. Divide between 3 silicone Magnum or Popsicle moulds. Insert popsicle stick and freeze till solid.

To make chocolate coating, place chocolate and coconut oil in a bowl and melt slowly over a double boiler.

Once Magnums are fully frozen, remove from moulds and dip into your chocolate coating mixture. Immediately sprinkle with chopped Macadamia and allow to sit on a lined baking sheet to set.

Drizzle melted Caramel Chocolate on as garnish. Enjoy!
