Mango-Mint Green Smoothie
This has got to be my favourite green smoothie recipe. It's creamy, not too sweet and tastes like summer. It's packed with pro-vitamin A (beta-carotene), vitamin C, fibre, folate, potassium and vitamin K. Lucy's food journal: http://on.fb.me/1v8m90i
Ingredients:
- 1 cup ice cubes
- 1 cup unsweetened almond milk
- 2 tightly-packed cups of baby spinach (or shredded kale)
- a few drops of vanilla extract
- a small handful of fresh mint leaves
- 1/2 large banana
- 1 small mango, or 1 cup frozen chopped mango
Blend in a high speed blender until combined (around 30 seconds), garnish with fresh mint leaves and enjoy!
