Garlic & Lemon Roasted Asparagus
Asparagus, like most vegetables, is delicious roasted. The garlic and lemon make it a little extra special.
- 2 bunches asparagus
- 4-6 garlic cloves
- Half a lemon
- Olive oil
- Salt and freshly ground pepper
- Cut the woody ends off the asparagus and place on a tray.
- Squash the garlic cloves a little (you can leave the skins on) and throw in the pan with the asparagus and lemon.
- Drizzle with a little olive oil and season to taste.
- Roast for 15-20 minutes.
