Garlic & Lemon Roasted Asparagus

Asparagus, like most vegetables, is delicious roasted. The garlic and lemon make it a little extra special.


  • 2 bunches asparagus
  • 4-6 garlic cloves
  • Half a lemon
  • Olive oil
  • Salt and freshly ground pepper


  1. Cut the woody ends off the asparagus and place on a tray.
  2. Squash the garlic cloves a little (you can leave the skins on) and throw in the pan with the asparagus and lemon.
  3. Drizzle with a little olive oil and season to taste.
  4. Roast for 15-20 minutes.
