Easy Spelt Hot Cross Buns
These moreish hot cross buns are easily made with wholewheat spelt flour and vegan yoghurt. You won't stop at one! Slice them in half, add some vegan butter or any other spread your heart desires and enjoy.
Serves 8 | Prep time: 15 mins | Cooking time: 25 mins
INGREDIENTS
- 2 cups wholewheat spelt flour
- 2 1/2 tsp baking powder
- 1/4 tsp bicarb soda
- Pinch of salt
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 Tbsp raw caster sugar
- 1/4 cup sultanas
- 3/4 cup vegan yoghurt (we used plain coconut yoghurt)
- 1 Tbsp olive oil
For the glazed cross
- 2 Tbsp icing sugar
- 1 tsp water (or use more for desired glaze consistency)
METHOD
- Preheat oven to 200C/392F. Line a tray with paper baking paper or a silicone baking mat.
- In a large bowl sift the dry ingredients together then mix in the sultanas.
- Add in the vegan yoghurt and oil and mix with a spoon, then knead the dough mixture with your hands.
- Divide the dough into eight equal pieces. Then using flour on your hands roll and pat each into balls and place on the baking tray.
- Bake for 20-25 minutes. Allow to cool on a wire rack.
- Optional step: while cooling, brush a little maple syrup on the top of each bun for a glazed look.
- Mix the icing sugar with water and add a cross to each bun using a piping bag. Enjoy!
