Easy Beetroot Hummus
Make your own delicious, creamy beetroot hummus in minutes. Serve with crackers, vegetable sticks, corn chips, pita bread, soya sticks. Whatever you desire!
Serves 12-14 | Prep time: 7 mins | Cooking time: 10 mins
INGREDIENTS
- 1 can chickpeas, drained & rinsed
- 1 beetroot, cooked
- 2 tsp garlic powder
- zest & juice of one lemon
- 3 Tbsp tahini
- 1/4 tsp salt
- 3/4 tsp cumin
- dash of cayenne pepper
- olive oil, to drizzle
METHOD
- Boil the beetroot then chop into quarters.
- After the beetroot has cooled a little, place all ingredients (except the oil) in a blender and blend until creamy.
- Drizzle some olive oil on top and serve.
