Double stuffed deep-fried doughnuts

These vegan doughnuts are absolutely incredible, deep fried and stuffed with ice cream, topped with whipped cream and oozing chocolate. Easily whipped up, this seriously mouth watering vegan dessert that will please everyone! Vegan eye porn ahead!

Ingredients

  • 1lt cooking oil
  • 2 Tbsp coconut oil
  • 3/4 cup soy milk
  • 1/2 cup freedom vegan honey (or golden syrup)
  • 1/4 cup applesauce
  • 1 1/2 cup plain flour
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp apple cider vinegar
  • 80g / 2.8oz vegan chocolate of your choice (we chose hazelnut, which was extra rich and luscious)

 

To serve:

  • Vanilla ice cream (we used soy based, but almond based would be nice as well!)
  • Cinnamon
  • Vegan whipped cream [available @ Uproar]
  • Grated chocolate

Method

  1. In a large bowl combine the dry ingredients; flour, baking powder, salt, cinnamon, set aside.
  2. In a saucepan on low heat mix the remaining wet ingredients; coconut oil, soy milk, vegan honey, applesauce, vanilla, apple cider vinegar, for 2-3 minutes stirring regularly.
  3. Once the saucepan begins to steam, remove from heat and add to bowl of dry ingredients.
  4. Mix just until combined and a soft dough has formed.
  5. In a deep frying pan heat 1lt of cooking oil, for this recipe we used rice bran oil as it is flavourless, has a high smoke point.
  6. Roll dough into 4 palm sized flat balls, place a small 2cm cube of chocolate inside each ball and wrap with the dough making sure there are no holes for the chocolate to escape.
  7. Flash fry each doughnut ball for 1-2 minutes, turning once. When golden brown, remove from heat and dry on paper towel.
  8. When the doughnuts are cool to touch on the outside, carefully slice a horizontal section in each doughnut. The chocolate will begin to ooze.
  9. Stuff with vanilla ice cream.
  10. Serve immediately with whipped cream on top, cinnamon, and chocolate shavings. Enjoy and remember to share with friends!
