Cinnamon Banana Porridge
Did you know cinnamon is made from the inner bark of trees? It contains antioxidants and has known anti-inflammatory and anti-bacterial properties. This warming spice gives your porridge an aromatic flavour. If you'd like to experiment try a pinch of nutmeg or clove.
Serves 1 | Prep time: 3 mins | Cooking time: 8 mins
- 1/2 cup rolled oats
- 1/2 tsp cinnamon
- 2 tsp ground flaxseed
- 1 cup fortified soy milk
- 1 banana
- 2 tsp maple syrup
- Add the oats, cinnamon, flaxseed and soy milk to a pot on a medium heat, cook until soft.
- Chop a ripe banana into slithers and place in a non stick fry pan. Pour the maple syrup over the top of the slithers and on a medium heat fry until golden brown and caramelized.
- Transfer the oatmeal to a serving bowl, place the banana on top and enjoy!
