Chick’n & Rice Bowl with Agave-Mustard Dressing

This vegan chick'n & rice bowl drizzled in an agave-mustard dressing is the second recipe by ETHiX Racing Team as part of their #RacedayRecipes series. Serves 1 | Prep time: 15 mins + soaking time | Cooking time: 25 mins

INGREDIENTS

  • 1 cup cooked rice
  • 1 cup soy curls
  • ½ large sweet potato, cubed
  • 1 cup Brussels sprouts, halved
  • 1 cup baby spinach
  • Oil, salt, pepper, optional seasonings (vegan poultry seasoning blend, smoked paprika)

Agave-Mustard Dressing

  • 1 Tbsp Dijon mustard
  • 1 Tbsp agave syrup
  • 1 tsp tahini (optional)

METHOD

  1. Soak soy curls for 20-30 min in water, squeeze dry, season, and sauté until browned.
  2. Roast sweet potato + Brussels sprouts at 218°C/425°F until caramelized, about 20 minutes.
  3. Whisk dressing ingredients until smooth.
  4. Build your bowl: spinach → rice → roasted veg → soy curls → dressing. 🏁 🌱
