Vegan Shrimp Cocktail
An easy crowd pleaser, without harming any sea creatures! Ready in 20 minutes.
Serves 6 | Prep time: 5 mins | Cooking time: 15 mins
INGREDIENTS
- 600g/21oz vegan prawns (we used Sophie’s Kitchen, but Lamyong frozen ‘prawns’ are good too)
- A dollop of coconut oil (or oil of choice)
- 1/2 cup tomato sauce (ketchup)
- 1/2 cup vegan mayonnaise
- 2 Tbsp lemon juice
- 1 tsp sriracha
- Splash of vinegar
METHOD
Prawns
- Heat oil in a pan, then cook the prawns on medium heat, until they become plump.
Sauce
- Combine tomato sauce and mayonnaise, mix well.
- Add in the lemon juice, sriracha and vinegar, and combine well.
Serving suggestion: Hook the prawns around the edges of your glass, filled with the sauce. Enjoy!
