Vegan Shrimp Cocktail

An easy crowd pleaser, without harming any sea creatures! Ready in 20 minutes.

Serves 6 | Prep time: 5 mins | Cooking time: 15 mins

INGREDIENTS

  • 600g/21oz vegan prawns (we used Sophie’s Kitchen, but Lamyong frozen ‘prawns’ are good too)
  • A dollop of coconut oil (or oil of choice)
  • 1/2 cup tomato sauce (ketchup)
  • 1/2 cup vegan mayonnaise
  • 2 Tbsp lemon juice
  • 1 tsp sriracha
  • Splash of vinegar

METHOD

Prawns

  1. Heat oil in a pan, then cook the prawns on medium heat, until they become plump.

Sauce

  1. Combine tomato sauce and mayonnaise, mix well.
  2. Add in the lemon juice, sriracha and vinegar, and combine well.

Serving suggestion: Hook the prawns around the edges of your glass, filled with the sauce. Enjoy!
