These chunky rainbow popsicles are guaranteed to make you feel magical!
- 1/2 cup cashew milk
- 2 cups raw unsalted cashews, soaked and drained
- 3 large bananas
- 1/4 cup pure maple syrup
- 1 Tbsp vanilla extract
- 5-6 raspberries
- 3-4 blueberries
- Pinch of Himalayan salt
- Throw everything in the blender (except raspberries and blueberries), and blend on high until smooth and creamy.
- Add raspberries and blueberries and blend just a little bit, in order to keep the fruit chunky.
- Transfer to ice cream moulds, and freeze until firm.
