Tofu Vegemite Stir-fry
That's right! We used the iconic Aussie spread, Vegemite, to marinate our tofu for this easy stir-fry! Simply combine the marinade ingredients together to marinate the tofu overnight. Stir-fry the tofu with mixed veggies, cashews and serve with brown rice or noodles.
Serves 2 | Prep time: 15 mins + marinating time | Cooking time: 15 mins
INGREDIENTS
- 200g firm tofu
- 25g cashews
- 400g mixed chopped veggies of choice ( we used carrot, broccoli, green capsicum)
Vegemite marinade
- 2 tsp Vegemite
- 1 Tbsp fresh lemon juice
- 1 garlic clove, finely chopped
- 1/2 tsp maple syrup
- 1/4 tsp chilli flakes
- Optional: tamari sauce, to taste
Serve with:
- brown rice or noodles
METHOD
- Overnight: Mix the marinade ingredients together. Place cut tofu in a container then spoon marinade over the tofu covering all pieces. Seal the container and leave in the fridge overnight to marinate.
- Dry roast the cashews in a frying pan for a few minutes until brown. Set aside.
- In the same pan on medium heat add a teaspoon of oil (if using) then add the marinated tofu and cook for about 5-6 minutes.
- Add the chopped veggies to the pan and stir-fry for a few more minutes. Taste before turning off heat and add some tamari sauce, according to taste.
- Serve with rice or noodles, topped with cashews.
