Tiktok Pasta with a Twist

Inspired by the viral “Tiktok Baked Feta Pasta”, we present our own vegan version with a saucy twist, using capsicum instead of tomatoes and with an added 'cheesy' sauce. Recipe by Rochelle.

MAKES 4 SERVINGS | PREP TIME: 20 mins | TOTAL TIME: 50 mins

EQUIPMENT

  • Blender / mixer
  • Medium – large oven baking tray
  • 1 saucepan and 1 medium – large pot

INGREDIENTS

  • 1 large / 2 small red capsicums (bell peppers)
  • 500g / 17.5oz of penne pasta (or pasta of your choice)
  • 300g / 10.5oz silken tofu
  • 150g / 5.3oz grams Hello Friend cheese sauce (or vegan cheese sauce of your choice)
  • 1 large block of Persian Macadamia Feta (or vegan feta of your choice)
  • 10g / 0.4oz of chopped fresh oregano leaves
  • 5g / 0.2oz of lightly dried basil
  • 1 pinch of black pepper
  • 1 tsp of onion powder
  • 1 tsp of veggie stock powder
  • 2 1/2 Tbsp of minced garlic (or other equivalent)
  • 1/4 cup of soy milk (or water)
  • 1/4 cup hot water
  • 1/2 cup olive oil
  • If you like your pasta a little bit spicy, add chilli as you please

METHOD

Baking Tray Part 1:

  1. Preheat oven to 200°c (400°f)
  2. Slice red capsicum into small pieces
  3. Place the block of feta in the middle of the oven dish
  4. Surround the feta with the diced red capsicum pieces
  5. Mix the stock with the hot water
  6. Evenly pour the above around the feta and over the capsicum
  7. Mix 2 tablespoons of garlic with the olive oil, onion powder and pepper
  8. Evenly pour the above around the feta and over the capsicum
  9. Evenly sprinkle the basil over the capsicum
  10. Bake in the oven for 30 minutes

Pasta (while dish is baking in the oven):

  1. Bring water to boil in pot (enough water to cover pasta)
  2. Cook Pasta until ready (approx. 15 minutes)
  3. When cooked, bring pasta to strainer and rinse pasta with warm water and let it drain

Sauce (while pasta is cooking):

  1. Blend cheese sauce, tofu, soy milk and 1/2 Tbsp of garlic
  2. Bring to saucepan and cook for approx. 5 min (boil for 20 seconds and then to medium heat for the remainder)

Baking Tray Part 2:
Once all of the above directions have been completed

  1. Safely remove dish from the oven and mash the feta and mix it around with the capsicum
  2. Pour the pasta into the tray and mix it all together
  3. Pour the sauce over the pasta dish as you wish
  4. Sprinkle the oregano leaves over the entire dish
  5. Serve and enjoy!
