Strawberry and Prawn Salad

This delicious combination of Vegan Prawn and Strawberry is the ideal light lunch for those who are looking for something packed with flavour! Recipe by Tenaya Gray.

Ingredients:

  • 500g / 18oz of salad mix
  • 1/2 red onion, thinly sliced
  • 500g /18oz strawberries, quartered
  • One pack of Sophie’s Kitchen Lightly Battered Prawns
  • 1 Tbsp coconut oil
  • 1 lemon
  • Pinch of chilli flakes
  • Salt and pepper to season
  • Fresh sprouts
  • Vegan mayonnaise
  • Balsamic glaze

Method:

1. Prepare all of the ingredients. Wash the salad mix, wash and quarter the strawberries and thinly slice the red onion. Combine in a large bowl and toss.

2. Transfer the fresh ingredients in the bowl to serving plates.

3. Prepare the battered prawns as per the package instructions. Heat a tablespoon of coconut oil in a frying pan on medium heat. Once the oil is hot, place the prawns in the pan and season with fresh lemon juice, salt, pepper and chilli flakes. Cook for approximately 3-5 minutes on each side or until they are golden brown.

4. Once the prawns are cooked, divide them between the four plates of salad. 5. Generously drizzle the salad with balsamic glaze and vegan mayonnaise, and add a small handful of sprouts. Enjoy!
