Spicy Corn Soup ★★★★★2 reviews

This is a frequent winter meal in our house. The kids love it and it is so easy to make!

Ingredient

Serves 4

  • 7-8 corn cobs (cut corn off the cob)
  • 2 onions
  • 1 leek
  • 4 garlic cloves
  • 2-3 chillis
  • 1Lt Massel chicken stock
  • 1 tsp ground coriander
  • 1 tsp cumin
  • 1 tsp tumeric
  • 1 tsp smokey paprika
  • Pinch of cayene pepper
  • Fresh Coriander

Method

  1. In a little oil cook the spices, onion, garlic, leek and chilli, for around 5 minutes
  2. Add corn and stir for a few minutes
  3. Add the stock in and let it simmer for about 15 minutes
  4. Add in the chopped coriander and blend together with a stick blender to smooth out the texture

    OMG this soup is divine…I also put a little spinkle of chilli and a can of cream of corn and made double the recipe. It’s so good that I could eat the whole pot on my own!
