Simple Salad

I caught this sneaky little hand (of my 3 year old son) stealing my lettuce and then noticed there was a bite taken from a piece of cucumber. This salad plus some roast potatoes is a staple lunch for me. Maddie's food journal:


  • lettuce
  • cherry tomatoes
  • carrot
  • red cabbage
  • red capsicum
  • cucumber
  • any other vegetables of your choice


1. Choose which vegetables you want to add to your simple salad.

2. Slice the vegetables up if you would like, so that they look delicious… or just eat them as they are.

3. Enjoy!
