Pineapple Cauliflower Fried Rice ★★★★1 review

Enjoy this vibrant Pineapple Cauliflower Fried Rice without the guilt!

Ingredients:

  • 1 Pineapple
  • 4 cups of Cauliflower Rice (fresh or frozen / note: the only ingredient should be cauliflower!)
  • 2 tbsp Coconut Aminos or Soy Sauce
  • 1/4 tsp Ginger Powder (or fresh Ginger)
  • 3 cups of Carrots, Peas, and Green beans
  • 1 Bell Pepper, diced
  • 1 yellow or white Onion, diced
  • 2 cloves of Garlic, minced
  • Salt and Pepper to taste
  • 2 tsp Sesame Oil

Optional toppings: chopped Green Onions, Red Pepper flakes, Dulse, Vegan Furikake or Sesame Seeds

Method:

1. Cut the whole pineapple in half and scoop out the flesh, chop up into small pieces, and set aside.

2. Heat up a deep pan (or wok if you have it) on medium heat and add in the chopped onions and garlic with just a splash of coconut aminos (or water or sesame oil if using) and cook until translucent, about 5 min.

3. Rhen add in the cauliflower rice, pineapple, carrots, peas, green beans, bell peppers. add in the rest of the coconut aminos and ginger then stir altogether for about 10 min.

4. When everything is tender transfer to the two hollow pineapple halves, top with green onion, red pepper flakes, dulse, and furikake, then enjoy!
