Passionfruit Bircher Muesli
This overnight bircher museli is a fantastic way to kick start a healthy day.
Serves 2 | Prep time: 5 mins + overnight | Cooking time: 0 mins
INGREDIENTS
- 2 cups rolled or instant oats
- 1 cup plant based milk of choice (we use soy)
- 1/4 cup + 1 Tbsp orange or apple juice (we used orange)
- 1 Tbsp lemon juice (optional)
Toppings
- 1 banana
- 1 passionfruit
- 1 Tbsp seed and nut mix
- 1 Tbsp agave or other plant syrup
METHOD
- Combine oats, milk, lemon and 1/4 cup of the juice in a medium sized bowl and place it covered in the fridge overnight
- When all of the liquid has been absorbed into the oats, drizzle 1 Tbsp extra juice, add the toppings and enjoy.
