Pad Thai ★★★★★5 reviews

Fancy some Thai but don't want all the extra oil? Try this! Super simple, refreshing and leaves you feeling light and sustained!

Serves 2 | Prep time: 15 mins | Cooking time: 0 mins

INGREDIENTS

  • 2 medium zucchinis
  • 2 carrots
  • 1 capsicum
  • 4 oyster mushrooms
  • 1 cup bean shoots
  • 1 cup red cabbage
  • 1/2 cup of spring onions
  • Sesame seeds

Sauce

  • 1/4 cup of peanut butter
  • 3 Tbsp of tamari
  • 4 Tbsp of water

METHOD

  1. Spiralise the zucchini and carrots. If you haven’t got a spiraliser you can thinly slice the vegetables instead!
  2. Cut the rest of the vegetables into small portions and set aside in a bowl.
  3. To make the sauce, mix all ingredients together in a bowl or in a food processor. You may add more water if needed depending on how runny you prefer your satay!
  4. Once that is done, combine all vegetables and sauce in a bowl and top with sesame seeds and some crushed peanuts!
