Oven-Baked Tofu Bites with Soy Protein Crisps
Crispy on the outside and tender on the inside, these gluten-free oven-baked tofu bites are coated in crunchy soy protein crisps for an extra-satisfying protein boost. Seasoned with savoury tamari, nutritional yeast flakes and herbs, they make an effortless, wholesome snack or a versatile topping for salads, grain bowls, and in wraps.

INGREDIENTS
- 400g/14oz firm tofu (pressed)
Wet Coating
- 1 Tbsp olive oil
- 1 Tbsp tamari
- 1 tsp apple cider vinegar
Dry Coating
- 4 Tbsp soy protein crisps
- 2 Tbsp tapioca starch
- 1/2 cup nutritional yeast flakes
- 2 tsp Italian herbs
- 2 tsp oregano
- 1/2 tsp sweet paprika
- 1/2 tsp hot paprika (or more if you prefer spicy)
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- salt & pepper, to taste
METHOD
- In a bowl, break the tofu into bite size pieces, then add the wet coating ingredients and gently mix ensuring all pieces are coated. Set aside.
- Preheat oven to 200C/390F and prepare tray with baking paper.
- In another bowl, combine all the dry coating ingredients. Use the back of a spoon to crush some of the soy protein crisps. Mix well.
- Add the tofu bites to the dry mix. Toss and coat well. Place them on the tray and bake for 25 minutes, then serve.
