Oven-Baked Tofu Bites with Soy Protein Crisps

Crispy on the outside and tender on the inside, these gluten-free oven-baked tofu bites are coated in crunchy soy protein crisps for an extra-satisfying protein boost. Seasoned with savoury tamari, nutritional yeast flakes and herbs, they make an effortless, wholesome snack or a versatile topping for salads, grain bowls, and in wraps.

INGREDIENTS

  • 400g/14oz firm tofu (pressed)

Wet Coating

  • 1 Tbsp olive oil
  • 1 Tbsp tamari
  • 1 tsp apple cider vinegar

Dry Coating

  • 4 Tbsp soy protein crisps
  • 2 Tbsp tapioca starch
  • 1/2 cup nutritional yeast flakes
  • 2 tsp Italian herbs
  • 2 tsp oregano
  • 1/2 tsp sweet paprika
  • 1/2 tsp hot paprika (or more if you prefer spicy)
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • salt & pepper, to taste

METHOD

  1. In a bowl, break the tofu into bite size pieces, then add the wet coating ingredients and gently mix ensuring all pieces are coated. Set aside.
  2. Preheat oven to 200C/390F and prepare tray with baking paper.
  3. In another bowl, combine all the dry coating ingredients. Use the back of a spoon to crush some of the soy protein crisps. Mix well.
  4. Add the tofu bites to the dry mix. Toss and coat well. Place them on the tray and bake for 25 minutes, then serve.
