Muesli & Fresh Fruit
A quick start to the 30 day challenge. Did we mention this was going to be easy? Surprisingly enough there are plenty of commercially available muesli on the market that are also vegan.*
Serves 1 | Prep time: 5 mins | Cooking time: 0 mins
INGREDIENTS
- 3/4 cups untoasted Muesli
- 2 tsp ground flax seeds (these are best bought whole and ground fresh – a mini blender or a small coffee/nut grinder is ideal for this.)
- 1 cup fortified soy milk
- 1 medium banana
METHOD
- Mix the ground flaxseeds through the muesli, then pour over soy milk and top with chopped banana.
*An additional 250ml of B12 fortified soy milk is necessary to meet the daily nutritional requirements of this meal plan

I couldn’t grind the Flax seeds but it was pretty delicious. I used almond milk; I hope that’s ok
Hi Marketa, you can use a coffee grinder if you have one to grind the flaxseeds or if you have a blender with a milling blade that would do too. It’s best to consume ground flaxseeds because they are easier to digest and you will obtain all the beneficial nutrients from them. The outer shell of the flaxseed cannot easily be broken down in our gut, that’s why it’s recommended to grind them before consuming.
Can I use rice milk? I’m really not a fan of soy milk.
Hi Rebecca, you can use a different plant milk, like rice milk, but it’s best you find one that is B12 fortified.
Simple and delicious, I wasn’t sure I was going to like Muesli but it was very good.
Can I use something other than muesli?
Hi Jillian, you could use oats and turn it into a porridge, though you may require more soy milk.
Or did you have anything else in mind?
I have been having a variation on this for 15 years after heart surgery my recipe is 3 tablespoons of Muesli + 3 tablespoons of Oatbran + 3 seedless prunes and a tablespoonful of Blueberries + Soy Milk
Love fruit and taste of the muesli and flax, but now have indigestion.

had this my first day of the challenge and still my go to breakfast 6 months later. I use what ever is in season or looks good at the market. strawberries, blueberries, raspberries, apples- even peaches and pears and always one banana. takes less than 5 minutes to but together
